SOURDOUGH S’MORES BANANA BREAD🍌 This banana bread loaf is the perfect addition to your summer and sourdough obsession! This recipe is made without dairy or eggs, and is not technically gluten-free, however I have a gluten intolerance and am able to digest sourdough!  Follow for more simple recipes! RECIPE  INGREDIENTS: 7 Tbsp melted coconut oil 2 large ripe bananas, mashed 2 Tbsp @Bob’s Red Mill egg replacement + 4 Tbsp water 3/4 cup brown sugar 1/2 cup sourdough discard 1/2 cup @kitehillfoods vanilla unsweetened greek style plant-based yogurt 1 tsp vanilla extract 2 1/2 cups gluten-free oat flour (blend oats to make your own) 1 tsp baking soda 1/2 tsp baking powder Pinch sea salt 1/3 cup dairy-free dark chocolate chunks + more for topping 1/3 cup gluten-free graham crackers, crushed + more for topping 1/3 cup mini marshmallows + more for topping DIRECTIONS: 1. Preheat oven to 350 degrees F and line a loaf pan with parchment paper. 2. Whisk together the coconut oil, mashed bananas, egg replacement, brown sugar, plant-based yogurt, and vanilla extract. 3. Add in the oat flour, baking soda, and baking powder. Stir until batter is just combined.  4. Fold in the chocolate chips, graham crackers, and mini marshmallows. 5. Transfer the batter into the prepared loaf pan. Top with more chocolate chips, graham crackers, and marshmallows. 6. Bake for 55-60 minutes until a knife comes out clean. Let cool before removing from the pan. Slice and enjoy! Store leftovers covered at room temperature.
