@fehmz.com: Easiest Khaman Dokla, I swear I’m addicted to this savoury cake! Can’t get enough. It also helps that this is a super easy and small recipe so it’s never too much. I used @swasthisrecipes version, with a couple variations and it’s a winner!! Adapted by @fehmz Liquid mixture: Half cup water 1-2 tblsp oil One-third tsp salt One-third tsp citric acid (sub 1 tblsp lemon juice) Half tblsp ground ginger & chilli 1 tsp sugar Stir until sugar dissolves. Dry mixture: 1 cup chana flour (chickpea flour) Quarter tsp turmeric Sift the above then add: 1-2 tblsp semolina Add the liquid mix into the dry mix. Whisk vigorously for at least 1 minute. You will have a thick batter. If it’s too thick you can add about 3-4 tblsp more water. You want a pancake batter consistency. Get your pot ready for steaming and add the water. I added the steam grid at the bottom plus another small bowl to ensure the tin doesn’t touch the water. Get the water hot so that’s it’s ready to begin steaming immediately. Prep your baking pan, add some baking paper to the bottom if you want an easy bottom peel that’s perfect. Brush pan including sides with 1 tblsp oil. Now add onto the batter: 3/4 tsp eno (fruit salts) And then: 1 tblsp water directly over the Eno to start the fizz. Whisk vigorously to incorporate the dough. Immediately pour into baking pan and put into pot to steam. Close lid and steam for 20mins. Instant pot: set function to steam, time to 20mins, pressure should be on LOW and vent must be closed. Make your vagaar and sugar syrup in the meantime. Vagaar: 3-4 tblsp oil 1 tblsp mustard seeds 6-10 curry leaves 2 slit green chillies 1 tblsp sesame seeds (optional) Heat until mustard seeds start popping. Set aside. Boil: Quarter cup sugar One-third cup water Once sugar has melted and syrup has boiled. Set aside to cool up to room temperature. Once the time is complete, insert a knife into the centre of the cake to make sure it’s done. Let cool a bit. Turn over onto a serving platter. Slice into serving pieces.
