![Paneer dum biryani✨ Making biryani isn’t honestly all that difficult. I’d rather make biryani than aloo parathas, any day! It just needs a lot of prepping - rice, fried onions, cutting chopping but with some planning it’s a fool-proof hit! Ingredients I used: For rice: - 1 cup soaked rice - 4 to 5 pepper corns - 2 cardamom - 2 cloves - 1 bayleaf - 1 slice of lemon - water for boiling For paneer: - 250g paneer cubes - 1 tbsp oil - salt - turmeric - red chilli powder For masala: - 4 tbsp oil + ghee - 1 tsp shahi jeera - 3 cloves - 2 cardamom - 1/2 inch cinnamon - 2 bay leaves - 6 peppercorns - 2 large or 3 small onions, sliced - 2 tomatoes - 1 tbsp ginger garlic paste - salt - turmeric - red chilli powder - coriander powder - biryani masala Additionally, - 1/4 cup milk + few strands of saffron - coriander leaves - mint leaves - fried onion - 4 tbsp ghee Note: - do not overcook the rice. Instead keep it a bit undercooked the first time when you boil it, as it will cook again when you give it dum. - cool the rice before adding it to the masala, else it will turn sticky inside the pot. - to give it dum, place the pot on a Tawa so it’s not in direct contact with the flame. Else it will burn at the bottom.
