not just in Germany, I don't know exactly who designed them, but there is a type of brick here that has top/bottom machined so they can be glued

We use wood because it holds up to our weather and climate better. In majority of the US, it does not make sense to use brick.

If I had to speculate, I would say cost? It seems masonry projects are very spendy here in USA just for a basic design.
