I've always liked using parchment paper so I could slide them off the hot sheet so the bottoms don't keep cooking

Cookie spread is only due to 2 things - butter or wet ingredient ratio (brown sugar, etc), and temperature when they go in the oven.

parchment is my favorite. i tried the silicone mats to be more environmentally friendly but i hated how things baked on them & they were always greasy
