The interior is filled with creamy, salty feta and once fried, you get a delicious crunch from the exterior. Drizzled with honey and finished with mint, this is a delicious dish to end the summer! 10-12 zucchini blossoms Baby zucchinis, sliced in half FILLING 2 ounces Feta, crumbled 1 Tablespoon Crème fraîche Mint, chopped BATTER 1/2 cup all purpose flour 2 teaspoons cornstarch 1/2 teaspoon kosher salt 1 cup sparkling water Vegetable oil for frying FINISHING Flaky Sea alt Honey Red Chile Flakes Mint — 1. Wash the zucchini flowers, remove the stamen, and dry. 2. Combine the feta, creme fraiche, and mint. Set aside. 3. Whisk together the flour, cornstarch, salt and sparkling water. 4. Heat an inch of vegetable oil in a frying pan over high heat. 5. Fry the zucchini blossoms and baby zucchinis (if using) for 2 minutes each side until golden. 6. Drain excess oil on paper towels. 7. Arrange the blossoms and zucchinis on a plate. Finish with salt, drizzle of honey, red Chile flakes, and mint.
