Then you need to make these! - 2 lb beets, diced (I prefer golden beets for this) - 1 1/2 tbsp avocado oil - 1 tsp salt - fresh thyme leaves - 2 tbsp orange juice Bake at 425°F until roasted, about 25-35 minutes. If you have a convention setting on your oven, this is the time to use it!
