without the egg i don’t want it🤣 (for the lemon oats) you’ll need: - 1/2 cup oats - 1 egg - zest of 1 lemon - 1tbsp honey - 1 cup (240ml) any milk (for the raspberry chia jam): - 1/2 cup (about 75g) fresh / frozen raspberries - juice of 1/4 of a lemon (or more if you prefer) - 2tsp chia seeds - 1tbsp honey (to serve): - any yogurt you like! - chopped pistachios method: 1. begin by placing the oats, egg, lemon zest, honey and milk in a small saucepan and place on a medium heat. 2. begin by whisking vigorously to ensure the egg is completely incorporated. 3. as soon as you start to see a little steam, lower the heat to low. 4. keep whisking continuously as the oats cook (this will take between 5-10 minutes). 5. meanwhile, you can place the raspberries, lemon juice, chia seeds and honey in a small bowl and microwave for 90 seconds. 6. stir and leave to one side. 7. keep whisking the oats until they have thickened nicely and the mixture is creamy and glossy. 8. remove from the heat and pour the oats into your serving bowl. 9. spoon over the raspberry chia jam wherever you like. 10. finish with a generous dollop of greek yogurt and a sprinkle of pistachios. 11. drizzle some extra honey / maple syrup if you like it sweeter… enjoy xxx #breakfast #oatmeal #porridge #yogurt #lemon
