@lagomchef: Hash browns!!! There’s loads of ways but I have always done a little extra confit of potato to get us some extra good potato!!! 5 minutes in a cool oil 120-130c confit garlic at the same time! Mix through cornflour, nutmeg, confit garlic. Shape then freeze and deep fry at 170c until golden brown!
