![Street Corn Chicken Tacos are hands down one of my favorite dinners. They’re packed with flavor, loaded with protein, and the creamy street corn topping takes them to the next level. Save this one because you’ll be making it on repeat! 🌮💛 What you’ll need: [CHICKEN] 1.5 lbs chicken breast Taco seasoning @Kinder's Flavors [CORN SALAD] ½ bag frozen corn (cooked & cooled) 1 cup plain Greek yogurt 3 tbsp lime juice Salt Cotija cheese Fresh cilantro, chopped Garlic powder Paprika [CILANTRO LIME SAUCE] 1 cup plain Greek yogurt 3 tbsp lime juice Fresh cilantro, chopped Salt To Serve Tortillas @Maria & Ricardo’s Tortillas Extra Cotija cheese Fresh cilantro 1. Slice the chicken breasts in half horizontally and season generously with taco seasoning. Cook in a skillet over medium heat for about 4 minutes per side, or until fully cooked. 2. In a large bowl, combine all of the corn salad ingredients and mix well. Set aside. 3. In a small bowl, stir together all of the cilantro lime sauce ingredients until smooth. 4. Dice the cooked chicken into bite-sized pieces (the smaller, the better, in my opinion!). 5.
