Filled with sweet strawberry jam and dusted with powdered sugar, they’re a true treat.🤗🤍 📝 Ingredients (Makes about 8–9 pieces) • 250 g all-purpose flour (2 cups) • 30 g sugar (2 ½ tbsp) • 1 tsp dry yeast (1 tsp) • 110 ml lukewarm milk (½ cup minus 1 tsp) • 40 g soft butter (3 tbsp) • 1 egg yolk (Size M) • 1 pinch of salt For filling & brushing: • about 150 g strawberry or raspberry jam (½ cup) • 20–25 g melted butter (about 1 ½ tbsp) • plenty of powdered sugar 🤍 Instructions 1. Dissolve the yeast with 1 tsp sugar in the lukewarm milk, let sit for 10 minutes. 2. In a bowl, combine flour, remaining sugar, salt, egg yolk, and butter. Add the yeast mixture and knead for 8–10 minutes into a smooth, soft dough. 3. Cover the dough and let rise for about 1 hour, until doubled in size. 4. Divide the dough into 8–10 pieces, shape into balls, and gently flatten. Place on a baking tray lined with parchment paper, cover, and let rest for 30 minutes. 5. Before baking, lightly brush the Berliners with some melted butter. 6. Preheat the oven to 180 °C (350 °F) top/bottom heat. Bake for 15–18 minutes until golden. 7. Right after baking, brush again with the remaining melted butter. Wrap the warm Berliners in a clean kitchen towel and let cool completely – this keeps them extra fluffy. 8. Poke a hole in the side and pipe in jam with a piping bag. 9. Dust generously with powdered sugar before serving. These oven-baked Berliners stay wonderfully soft and fluffy, with extra moisture from the butter. 🥰
