Potato Soup  8-9 small/medium russet potatoes cut into 1 inch cubes   1 medium onion, diced  6 pieces of bacon cut into small pieces 2 tablespoons butter 1 tablespoon minced garlic 1/4 cup flour 3 1/2 cups chicken broth 3/4 cup sour cream 2 cups half and half 2 cups shredded cheddar cheese Salt and pepper to taste 2 green onions  Peel potatoes and cut into 1” pieces. Rinse and add to pot and cover with 1” of water. Add 1 tablespoon salt and bring to a boil until the potatoes are fork tender. In the pot you are going to cook the soup in add your bacon and cook in medium heat stirring occasionally. While the potatoes and bacon are cooking. Dice your onion. Once potatoes are done Drain and add back to the same pot. Gently mash to break up the potatoes. If you like a chunkier soup you can control how much you mash the potatoes. If you like it creamy you can mash the potatoes more. Once mashed to your liking, set aside.  Remove your bacon from the pot and drain on paper towels and set aside for later. Leave the bacon grease in the pot. Add in your onion and let that cook for a few minutes until softened.  Add butter and garlic and let cook for one minute. Add in your flour and stir in well letting cook through for a couple minutes. Add chicken broth and half and half. Bring to a boil and reduce to a simmer. Add potatoes and stir well. Add sour cream and mix through. Add black pepper. Remove from heat and stir in 1 1/2 cups of cheddar cheese. Top with green onions, bacon and more cheese. *note after adding cheese taste the soup to add salt to your liking.
