Smash burger with bacon jam 🤤 Ingredients   200g bacon chopped 1 brown onion finely diced 1 clove garlic minced 1.4 tsp chilli powder 3 tbsp maple syrup 1/4 cup apple cider vinegar 1/4 cup brown sugar 3 sprigs fresh thyme Brioche Burger Buns Pickles 80/20 beef mince Swiss or cheddar cheese 1 tbsp unsalted butter Burger sauce 1/3 cup mayo 1 tbsp Worcestershire sauce 1 tsp hot sauce 1/2 shallot diced 1 tsp paprika 1 tsp horseradish 1 tbsp tomato sauce Method: 1. Add bacon to a pan & cook down until slightly crispy. Remove bacon from pan & reserve some of the rendered fat in the pan. 2. Sauté the onions for 4 minutes in the bacon fat before adding back in the bacon along with garlic, fresh thyme & chilli powder. Sauté for 1 minute on a medium to low heat until fragrant. 3. Deglaze the pan with apple cider vinegar, add in sugar and maple syrup. Mix well until sugar has dissolved & simmer on low until a jam-like consistency. Set aside 4. Add butter to a pan until melted, place Brioche Buns in the pan & toast until lightly coloured. 5. For the burger sauce mix all sauce ingredients in a small bowl 6. For the patties, roll beef into roughly 120g balls & season with salt. 7. In a cast iron pan or flat top add high smoke oil (avocado oil or beef tallow) before placing ball down using a square piece of baking paper & a spatula press down to smash the beef in to a thin patty don’t move the beef patty until its ready to flip, roughly 90 seconds each side.  8. Once flipped, place a slice of cheese on top of the patty, add a lid to help melt the cheese.  9. To assemble, spread a layer of burger sauce, add two patties, top with bacon jam & finish with the pickles. 10. Spread burger sauce to the top bun then lid. Enjoy #burgers #smashburger #fyp #asmr
