There's nothing better than jjajangmyeon on a rainy day - pure heaven! 1 medium-sized onion, diced 1 zucchini, diced 1 cup cabbage, diced 1 cup mushrooms of choice, diced 3-4 garlic cloves, minced 1 cucumber, thinly sliced 1 tsp sugar Toasted sesame seeds Salt to taste 2 cups water or vegetable stock 3-4 tbsp vegetable oil 1 package Sanuki Gonin Shu Udon Weizennudeln (or any udon noodles) 1 packet Ottogi Jjajang powder (Ottogi Jjajang powder can be cooked simply and easily, without the need to fry Chunjang or prepare starch separately) ~ Dice the onion, zucchini, mushrooms, and cabbage into small cubes. ~ Mince the garlic. ~ Thinly slice the cucumber. ~ Heat a nonstick pan over medium heat. Add 3-4 tbsp of vegetable oil. ~ Add the diced onions and sauté for a few minutes until they start to soften. ~ Add the diced zucchini and mushrooms, and sauté for a few more minutes. ~ Add the diced cabbage and sauté again until all the vegetables are softened. ~ In a separate bowl, dissolve the Ottogi Jjajang powder in 1 cup of water. ~ Create a small space in the middle of the pan and add the black bean mix. Cook that for a couple of minutes. ~ Mix the vegetables with the black bean mix. Add 1 cup of water or vegetable stock and stir well. ~ Bring the mixture to a boil and cook until the sauce reaches your desired thickness. If you're using black bean paste without cornstarch, mix 1 tbsp of cornstarch with 2 tbsp of water and add to the sauce to thicken it. ~ Boil the udon noodles according to the package instructions. Drain well. ~ Place the cooked noodles in a bowl. Pour the black bean sauce with vegetables over the noodles.
