Daal Series Pt. 3: Moong Daal Bhuna Ingredients: - 3 tbsp Oil - 3 Bay Leaves - Pinch of Cumin Seeds - 1 White Onion - 1 Garlic and Ginger Block or 2 tsp Crushed Garlic and 1 tsp Crushed Ginger - 2 Tomatoes - Large Pinch of Salt - 1 tsp Turmeric - 1 tsp Coriander Powder - 1 tsp Chilli Powder (or less) - 1 cup Green Split Moong Daal (about 220g) - 2 - 3 Green Chillies - 3/4 Garam Masala - Pinch or Methi (Fenugreek) Leaves - Handful of Fresh Coriander Method: 1. Wash the lentils 3 to 4 times and then let it soak in some water for at least 2 to 3 hours. 2. Heat that oil in a pan and add in the bay leaves and the Cumin seeds, and then cook for a minute. Then slice the onion and add it to the pan followed by the garlic and ginger, touch of salt and then cook until the onions are softened. 3. The tomato into segments and add it to the pan. Alternatively, you can blend the tomatoes and add them in. Cook and stir until the tomatoes are softened and broken down, then add in the spices (apart from garam masala and Methi leaves) with a splash of water, stir and then cook for 2-3 minutes. 4. Drain the lentils and then add it to the pan followed by the 3 green chilies. You can cut open the chilies if you want more heat. Stir for 1 to 2 minutes and then add in 7 mugs of boiling water (approx 2.5 litres of water). 5. Bring up to a boil and then simmer on medium to high heat for around 45 minutes, or until the lentils have softened and started to thicken. If the lentils start drying up before they have softened add in more water. Stir occasionally to prevent sticking. Drop the heat to low once the lentils have thickened.  6. At this stage, sprinkle in the garam masala and Methi leaves and stir. Add in the chopped coriander, stir, and then you’re done.
