Spiced Seeded Crackers….. make these crunchy, yummy & very tasty GF crackers.  Best advice I’d give you is to make double quantities 😊 Ingredients 150g Flaxseeds 10g chia Seeds 80g Mixed seeds (pumpkin, sunflower seeds) 1/2 tsp salt 1/2 Spice (i added ground cumin, you can use smoked paprika, fennel, chilli powder) To Make : If possible soak overnight or a couple of hours. Soak flaxseeds and Chia seeds in a bowl with enough water to cover and leave to soak overnight. Place mixed seeds in a seperate bowl, cover with water and leave to soak overnight. Next morning  drain and rinse the mixed seeds. Drain the flaxseeds and chia seeds but do not rinse as they will have a gelatinous texture. Preheat oven to 120ºC (100ºC fan) Add the drained and rinsed mixed seeds to the flaxseeds, mix them together and add the salt and spice.  Mix to combine. Line a large baking tray (or two small trays) with baking paper. Spread a very thin even layer of the seeded mixture over the tray.  Bake for 2-3 hours, flipping half way so to get a nice even crisp cracker. Remove from the oven, allow to cool then cut into squares (using a pizza cutter / knife) or triangles or simply break into pieces. Enjoy crackers simply with butter, or humous, smashed avo, cheese …….. Store crackers in an airtight container in the pantry.
