Apple Strudel 
 Apples: - 600g sliced apple   - 100g brown sugar   - Juice & zest of 1 lemon   - 2g cinnamon powder   - 2g salt   Mix well, leave for 4-12 hours in the fridge. Each resting step should be at least 2 hours but can be up to 12 hours in a cool place. Mix well to form a light crumb. Rest. In a separate bowl, combine: - 250g warm water - 8g cider vinegar - 5g salt - 1g baking powder Add the mixture to the flour crumb and mix by hand for 2-3 minutes to form a rough dough. Rest. Clotted Cream: - 500g cream - 50g butter Reduce until the total weight reaches 300g, stirring often, chill.
 Pastry: Cut the dough in half until you have 16 equal balls. Roll each into a ball. Rest. Roll out each ball thin (if you have a pasta machine, great time to use it). Aim for a thickness under 2mm, lining each layer with flour to prevent sticking. Then brush each sheet of pastry with spiced butter; you should have a total of 16 layers. Rest. Assembly: Squeeze excess water from the apples, roll the dough to 4-5mm thick. When building the strudel, I suggest not skipping the plaiting part, this holds the expanding pastry together & also makes it look like something from Harry Potter. Rest. Brush with the remaining spiced butter and bake at 175°C for 60 minutes on a heavy baking tray. If you make this yourself or have any questions—just ask!
