RICE PAPER NOODLES WITH JAPANESE CURRY Did you know you can make noodles out of rice paper in just a few mins, no cooking required? It comes out so soft and chewy and is perfect when served with Japanese curry. The texture reminds me of flat noodles but so it is so easy to make. All you do is dip the rice paper in cold water to rehydrate, brush with oil, then cut into noodle strands. As a tip, soak the noodles in a bowl of cold water (no more than an hour) to keep it moist until you are ready to use. Serve it with an easy Japanese curry and this meal will be served in 30 mins or less! - 1 Tbsp vegetable oil - 1/2 onion, thinly sliced - 1 carrot, cut into 1/2 inch pices - 2 cups of chicken stock - 3 cubes of Japanese curry roux (41g) - 1 Tbsp soy sauce - 1 tsp mirin - 1 tsp sugar - 12 pieces rice paper - Chopped green onion, as a topping - Cooked minced pork, optional as a topping 1. In a medium pot, add oil and onion and sauté for a few mins until softened. Add chicken stock, Japanese curry roux cubes, and mirin and stir until mixture is thickened, about 5 mins. Once done, set aside. 2. On a cutting board, brush the board with some oil. Dip 3 pieces of rice paper in cold water then stack together aligned evenly. Place rice paper on cutting board and brush the top layer with more oil. Cut noodles into 1 inch thick noodles or your desired size. Transfer noodles to a bowl of cold water and soak to keep it hydrated while you make the noodles with remaining rice paper. 3. In a separate bowl, ladle in Japanese curry to desired amount, then drain rice paper noodles and add to the curry sauce and mix well.
