Triple Chocolate cake w/apricot jam recipe🍑🫧 The chocolate sponge recipe is from my previous post, but here are ingredients: 130 gr very soft butter 70 gr sugar 2 eggs vanilla 100 gr greek yogurt  2 espresso shots  150 gr sifted flour 40 gr cacao powder  1/2 ts baking powder  1/2 ts baking soda  Mix everything in the written above order. Bake at 190C 35-40 minutes or until dry toothpick. I had a 22cm dish. If you have smaller than the baking time is ~10 minutes longer. Chocolate frosting: 250 gr cream cheese  100 gr heavy cream  50 gr sugar 30 gr cacao powder  Mix everything to the smooth texture. I did it with a whisk🤓 Chocolate ganache on top: 100 gr dark chocolate  150 gr heavy cream  Heat all the heavy cream in a saucepan to the very hot but NOT boiling state. Put the chocolate pieces into a bowl, add hot heavy cream & let it sit for 5 minutes. Mix with a whisk until smooth chocolate texture. Let it cool to the room temperature 10-15 minutes. Apricot jam: 200 gr or more🤓 apricots 150 ml water 40 gr sugar (add more if your apricots are sour) Cut apricots into small pieces. Put them into the saucepan, add water & sugar. Boil 10-15 minutes until apricots are tender and soft like jam.
