@sooziethefoodie: I know I’ve said it before but I’ll say it again a milllion times- duck is my favorite protein 😍 It is super easy to make. Duck legs are my favorite part because the meat is super tender & juicy and the skin gets really crispy. I always prefer to roast mine in the oven because to me it has been the fail proof prep. The first steps are poking holes to the skin (but not into the meat), salting the duck, and the letting set to room temperature. Then removing the excess moisture and salting again. The key to baking it is adding a ton of fat to the bottom of your pan I used part salted butter and part duck fat. I really like adding a little bit of butter with my duck because it creates a really nice color. The next important step I’ve learned is adding the duck in skin side up to a cold oven! I baked mine at 285°F for 3 hours. That sounds like a long time, but The Meat will absorb the fat and the skin will get super crispy 😍 I kept it simple by garnishing with little baby kumquats (they reminded me of pumpkins 🎃) and rock salt. Rock salt is a super fun way to add a light salty flavor without the salt texture. This is my first time really showing you all how I eat the food I make- I shredded the duck then added it back into the fat.
