@growinghomeandgarden: Replying to @slkitalyalways Here’s the rough recipe that I follow! The vegetables I use tend to change based on what I have in the fridge:
- Preheat the oven to 425 degrees Fahrenheit - Rough chop and peel about 4 potatoes, 4 carrots, an onion, and several cloves of garlic - In a roasting pan, liberally season your ~3-4 lb chicken with salt, pepper, and dried oregano and drizzle a couple tablespoons of melted butter over the top of the bird - Stuff the chicken with half of the onions and garlic, here you can also stuff in any fresh herbs or cut up whole lemon if you have them - Add your root vegetables and any remaining onion and garlic around the bird, salt, drizzle with olive oil, and toss! You may want to turn over the roasting vegetables once during cooking, around the 50-60 minute mark if they’re starting to brown on the bottom. - Place it all in a 425 degree oven for about 75 minutes, or until the juices run clear. You’ll know the chicken is finished cooking when the temperature of the meat reads 165 Fahrenheit throughout.
