Now blitz it all and let it reduce. Transfer in a mould and chill.
 STRAWBERRY NORI: - 250g strawberry - 50g marmalade - 10g lemon juice - 40g sugar Cook till you reach 108C, blitz, pass and spread on a silpad or baking paper, make a rectangle 15x25, 2mm thick. 
Dry in static oven or dehydrator at 60c for 3 hrs. RICE PUDDING / DULCE DE LECHE: - 80g x Sushi Rice - 160g x Coconut Milk - 25g x Sugar - 1 x Vanilla Pod Wash the rice and soak it in the coconut milk for 30 minutes. Cook it at low hit starting from cold for 20/25 minutes until super creamy. STEP BY STEP: - Place your Nori on the sushi mat (baking paper or cling film underneath will be a massive help), put the rice on top of it leaving 2cm from each of the sides. - Help yourself wetting your fingers in cold water to work better the sticky rice. - Slice and place the membrillo in the centre, roll the maki and slice it. 
Serve with grated sheese and lemon!
