Tuscan Salmon & Butter Bean One Pot I've been feeling really nostalgic this week. Thinking about some of the dinners I shared on here when I first started... This was a dinner I used to make all the time, with a little butter bean upgrade!   It's comforting and rich and full of flavour and the salmon honestly just melts in your mouth.  My new cookbook Speedy 10 is available to pre order...the thing about pre ordering is that you don't pay for it now, AND you'll end up paying whatever the lowest price is between now and release day! 💃 I have written up the recipe for this below, head to my bio or comment SPEEDY for the book link, Amy x Feeds 4 Oil for frying 4 boneless salmon fillets 1 tsp smoked paprika 1 tbsp oil 1 onion finely chopped 2 cloves garlic finely chopped 400g tin of butter beans drained 60g fresh spinach finely chopped 10 semi dried tomatoes (you can use sun dried tomatoes from a jar if you prefer) 300ml single cream 300ml chicken stock 50g fresh grated parmesan 1 tbsp fresh chopped herbs (parsley and rosemary) Salt and ground black pepper Prep all of the veg, drain the beans, grate the cheese and make up the chicken stock. Heat a drizzle of oil in a large non-stick pan. Pat the salmon dry with kitchen roll. Mix the paprika and oil together and brush it all over the salmon. Add the salmon to the pan, skin side down and fry for around 3 minutes on a medium heat or until the paler pink cooked line reaches halfway up the salmon. Turn the salmon over and fry for another 2-3 minutes or until cooked through. Carefully peel off the skin and set aside (you can leave it on if you prefer) Add the onion to the pan and fry for 5 minutes until soft. Stir in the garlic for the last minute of frying. Add the butter beans, spinach, tomatoes, cream and stock. Season with salt and pepper and give it a good stir. Bring to the boil and simmer on a medium heat for 5 minutes until it starts to thicken. Stir in the parmesan and herbs until the parmesan has melted. Carefully add the salmon to the sauce. Simmer for another 2-3 minutes just to warm the salmon through.  Serve with new potatoes (or mash!) and vegetables. #comfortfood #delicious #sotasty #salmon
