I’m honored to have had mi mami share her recipe with me. it was such a pain to make but really proud of this 🥹💛 RECIPE Mole sauce - •1 birote a.k.a bolillo fried in oil •2 tortilla fried in oil •4 chile mulata •4 chile ancho •4 chile pasilla •4 chile de árbol (more if spicy) •1 tomato •half an onion •1/2 cup of roasted peanuts •1/2 cup of roasted almonds (let sit in hot water to peel first) •6 cloves •1 block of abuelita •dash of cinnamon •1/2 cup of sugar •chicken bouillon to taste Fry the birote and tortillas in oil and set to the side. You could also fry all the above ingredients in oil, but I air fried mine to minimize the use of oil. Once fried, blend ingredients with the chicken stock until you get your desired sauce texture.
