na I don't trust their brine. I've brined many "pre-brined" turkeys overnight and it always comes out great.

Your logic makes no sense. If the Turkey is already brined then the proteins would break down too far just sitting in the store. Brine your Turkey!

I've always wondered. when they process and package, how long is the thawed bird in brine? or is it packaged and immediately frozen. that won't brine.

It depends on if the bird is kosher or not and if so skip the wet brine but dry brine and keep in fridge for 48 to 72 hours before cooking 💯🔥🤌

You can brine it fine, if it’s too high ( above 6% )then adjust the brine to ge less salt more spices.
