Chicken Cacciatore 🐓🍅 Ingredients: 3 tablespoons olive oil divided

4 skinless chicken thighs

1 pinch salt to season

1 pinch pepper

1 medium onion diced

2 tablespoons garlic minced, or 4 cloves

1 small bell pepper diced

1 large carrot peeled and sliced

1 punnet of mushrooms sliced

½ cup pitted black olives 1 sprig of thyme

2 tablespoons fresh parsley plus more to garnish

2 tablespoons fresh basil chopped

1 teaspoon fresh/dried oregano

150 ml red wine

2 tablespoons tomato paste

5 Roma tomatoes halved 2 handfuls of cherry tomatoes 

½ teaspoon red pepper flakes Instructions: Season chicken with salt and pepper. Heat 2 tablespoons of oil in a cast iron skillet and sear chicken until golden, about 3-4 minutes per side. Remove and set aside. Add remaining oil to the skillet. Sauté onion until transparent (3-4 minutes), then add garlic and cook until fragrant (30 seconds). Add peppers, carrot, mushrooms, and herbs; cook for 5 minutes until vegetables start to soften. Pour in wine, scraping up browned bits. Cook until reduced (2 minutes). Add crushed tomatoes, tomato paste, Roma tomatoes, and chili flakes. Season with salt and pepper. Return chicken to skillet and cook as follows: Stove Top: Cover and simmer on low, stirring occasionally, for 40 minutes. Add olives and simmer for another 10 minutes. Garnish with parsley and serve. Oven: Preheat oven to 375°F (190°C). Transfer skillet to oven and cook covered for 50 minutes.
