A quick & easy dinner recipe for you🍣 Teriyaki salmon with broccolini & coconut rice. Save this recipe & give it a try for yourself 🫶🏼 Recipe below  - 4 x 150g fillets wild caught salmon  - bunch of broccolini - 1 cup of organic white rice - 200ml of Ayam canned coconut milk - chilli flakes - 2 cloves of garlic  Teriyaki sauce - 1/3 cup pineapple juice - 1/3 cup tamari or gf soy sauce - 3 tablespoons water - 1 tablespoon coconut sugar  - 2 tablespoons apple cider vinegar - 4 cloves garlic, minced - 2 tsp ginger, minced/grated - Pepper - 1 tbsp arrowroot flour Pre-heat oven to 180 degrees. Prepare your teriyaki sauce by combining all ingredients in a large bowl and stir well. Place salmon fillets in the bowl, covering the salmon with teriyaki sauce and set aside while you prepare your rice. Cook rice your preferred way using half water and half coconut milk.  Place salmon fillets on a lined baking tray and bake in the oven for around 8-12 minutes or until cooked to your liking. Keep the teriyaki sauce. Whilst your salmon is baking, saute broccolini with garlic, chilli flakes & olive oil for few minutes or until slightly seared. Add a splash of water to the pan and quickly cover with a lid to steam the broccolini. Cook until just softened and remove from pan.  Transfer remaining marinade to the same pan and bring to a boil then reduce heat to a simmer, stirring occasionally until slightly thickened (3-4 min) then remove from heat. Serve salmon, broccolini & rice together. Pour teriyaki sauce over the top.  Sprinkle with chilli flakes and/or sesame seeds if you like.
