maybe we are creative & don’t even realize it 💗 this is a one-pan meal (although you do have to whip out the food processor), it’s packed with protein, loaded with veggies & doused in a creamy, dreamy, slightly spicy red pepper & feta sauce. so good but hard to explain…you just gotta try!   RECIPE (gluten free*, dairy free option**): for the sauce: -8 oz roasted red peppers (measured after draining the liquid; about 1 heaping cup) -1/4 cup + 1 tbsp chicken broth -1 cup feta (**sub a vegan one for dairy free option) -lots of red pepper flakes! for the skillet: -1 lb ground beef -1 zucchini, cut into quarters lengthwise & then sliced -1 bell pepper, diced into large chunks -1/2 red onion, diced -8 oz cherry tomatoes -3 cloves garlic, minced -1 tsp dried oregano -1/2 tsp dried mint (don’t stress if you don’t have this!) to serve: -cooked orzo (*sub with rice or quinoa if GF) -chopped parsley (optional) -feta  blend together all the sauce ingredients in a small food processor until smooth. there will be some texture from the feta remaining. set aside. bring a large pan to medium heat. once hot, add ground beef. cook, breaking apart, until browned through. remove from pan. if there is excess grease from the beef, you can use that to sauté your veggies. my beef was lean so i added a bit of oil to the pan. then, add onion, bell pepper, cherry tomatoes and zucchini. cook for about 8 minutes, stirring occasionally, until tender. add garlic and cook one more minute. add back in the ground beef & the red pepper sauce. reduce heat to low and stir. let cook until everything is warm. garnish with parsley, feta & red pepper flakes. serve over orzo. enjoy :)  #roastedredpeppers  #feta  #onepanmeal  #mediterranean  #greekfood  #groundbeefrecipes  #healthyrecipes  #healthydinner  #healthydinnerideas  #weeknightdinners  #glutenfreerecipes  #easyandhealthy  #easydinner  #creativity
