@eleanorgwilkinson: 🍚Thai Green Coconut Rice with Tofu🍚 I’ve made this 4 times in the last few weeks and I bloomin love it. Don’t skip the cashews, they’re arguably the best bit x (unless ur allergic in which case plz do..) For one portion, you need: - 75g basmati rice - 1/2 tin (around 200g) coconut milk - 55g water - 1 tbsp Thai green curry paste - Vegetables of your choice (I used broccoli, baby corn and tomatoes) - 100g tofu, chopped into small cubes - Salt - Handful of cashews - Soy sauce - Sesame oil Preheat the oven to 200ºC. Add the rice to a baking dish with the coconut milk, water and curry paste. Mix it up until the curry paste is evenly distributed. Put the vegetables and the tofu on top of the rice and season with salt. Bake in the oven for 25 minutes. Take it out of the oven and sprinkle the cashews on top and bake for another 15 minutes. Once cooked, drizzle with sesame oil and season with soy sauce.
