slight corrections here to be more accurate: it is a custard, but water based instead of dairy-based. it is exactly what is used in lemon meringue pie

I leave the zest in but I like my curd really tart. I also mix the zest and sugar first and leave it sit for a few hours before to pull the oils out.

Is there any way to make this so that it doesn’t taste like blood? I’ve tried different recipes, different pots, different water sources, but it always has that copper-blood taste to me :(
