Creamy and Cheesy Beef Enchilada Bake is easy to make and so good!  INGREDIENTS 1 lb of ground beef 1 chopped onion 1/2 tsp salt and pepper  2 tsp chili powder 1 tsp each of cumin and dried cilantro 1 Tbsp minced garlic  1 can rinsed and drained black beans  24 white corn tortillas  2 cups shredded Monterey Jack Cheese  3 tbsp butter 3 tbsp flour 2 cups chicken broth 1 cup sour cream 1/3 cup green chiles  Fresh cilantro  INSTRUCTIONS Cook ground beef in a skillet over medium high heat with a chopped onion until browned. Drain the grease and season with taco seasoning and minced garlic. Drain and rinse a can of black beans and stir those into the beef mixture.  In a pot over medium heat melt 3 tbsp of butter. Stir in 3 tbsp of flour and let cook for a minute. Add 2 cups of chicken broth and stir until it thickens. Remove from the heat and add 1 cup of sour cream, green chiles, and 1/2 cup of shredded Monterey Jack cheese. Stir well.  Preheat your oven to 400 degrees and pour a little bit of the white sauce into a 9x13 greased baking dish.  Place a layer of white corn tortillas over the sauce overlapping them to form the base. Add on 1/3 of the beef and bean mixture and top that with shredded cheese.  Continue layering ingredients. I did three layers of the meat/bean mixture.  Place a final layer of tortillas on top and pour on remaining white sauce and top with a little more shredded cheese.  Bake in the oven at 375 degrees for about 25 minutes.
