Double Choc Chip Muffins!  It’s been a hot minute since I made muffins. I’ve been doing so much dinner content that I’ve missed making other things in the kitchen! I had actually ran out of vanilla essence and used 2 x tbspn of maple syrup instead… I actually think I prefer that over the vanilla! This makes 6 jumbo or 10-12 standard muffins 😘 Ingredients: 2 & 1/2 cups self raising flour 1 x tspn bi-carb soda  1 x tbspn baking powder 1 x cup sugar (I use brown) 3 x tbspn cocoa powder Pinch of sugar 2 x eggs  1 x cup milk of choice  1/2 cup melted butter 1/2 cup choc chips  1 x tbspn vanilla essence or 2 x tbspn maple syrup  - Pre-heat oven to 210 degrees - Sift flour, add bi-carb soda, baking powder and cocoa powder to a bowl and mix. - In a separate bowl add eggs and whisk, add in milk, sugar, melted butter and vanilla essence/maple syrup to bowl - Create a well into flour mix and pour in wet ingredients. - Add in chocolate chips - Slowly & gently, combine all ingredients until they just come together - Put muffin cases in muffin trays and put mix into muffin cases - If possible, space muffins out so they have plenty of room to rise, unlike scones that bake better when they are touching, muffins like their personal space 😂 - Top with more chocolate chips  - Bake in oven for 6 minutes at the 210 degrees  - Without opening the oven door, turn heat down to 180 degrees. - This will put the heat up their arse to rise quickly which gives you that cafe style muffin top, by reducing the heat the muffin can continue to cook through. - After turning down the heat, cook for a further 25 minutes. - If making standard size muffins, 16-18 minutes should be plenty. - Once muffins are out of the oven, allow to sit for up to 5 minutes before removing to sit and cool. #Muffins #JumboMuffins #DoubleChocChipMuffins #Baking #Cooking
