I always do it at the lowest facing to a customer. Just in case they want to have sticky fingers they always catch the Lowest first. also I hide the big bills underneath not on the bottom of 20's

I was taught before they were computerized cash registers that you count the change up so if you have 4cents to pay you back, you start with that so 4
