Place all the ingredients into a tall jar. 2. Using an immersion blender, start at the bottom and begin to mix, and slowly move to the top to emulsify the oil into the yolks. Take your time or it will split. 3. Season with salt, and done! Crispy calamari - 4 tubes of squid, cut into rings - Juice of 2 kiwi fruits - 200g flour - 100g rice flour - 2 tbsp old bay seasoning - 1 tbsp salt - Oil for frying Method 1. Place the squid rings into a bowl with the kiwi juice (kiwi contains a natural enzyme that helps to tenderise the meat). 2. Mix and set aside for 20 minutes. 3. Mix the flour with the old bay and salt. 4. Heat the oil to 170c. 5. Dust the squid in the flour, shake off any excess and fry for 3-4 minutes or until golden brown. 6.
