CO is only a byproduct if your stove isn't burning correctly - proper combustion should just be co2 and water.

1800 isn't too bad. OSHA standard is 8 hours at 5000ppm CO2 and 50ppm CO. 1 hour of baking like this is ok

CO2 is going to be done somewhere since nobody wants nuclear outside of France, Illinois, and Russia. Gas also has more control than electric.
