Chicken Biryani  For the chicken -  Chicken legs - 1 and a half kg  5-6 medium onions (depends on size)  9 cloves garlic and medium size piece ginger  - Fry onions - then add ginger and garlic one golden brown  Add chicken legs - then spices  - Greek yoghurt - 1tbsp  - Shan Sindhi biryani masala  - 1 full packet  - Extra spices: Haldi (Tumeric) - 1tsp  - paprika - 1tsp  - Salt - 1tsp but adjust as you go along if more is needed.  - Coriander powder - 1tsp  Mix and leave to cook on high heat for 8-10 mins once oil rising and it’s sticking add some water place lid on and leave on low heat for 20-25mins.  Whilst that is cooking half cook potatoes  I used one full small bag of baby potatoes  - you can add as many potatoes as you like  - Fried them in pan for 10-15 mins until half cooked, golden and crispy  - Chicken should nearly be cooked- add  - 5/6 chopped tomatoes.  - Leave on medium heat- low heat for another 15mins to allow all the masala come together at this point add your potatoes. Once chicken is cooked and masala has thickened. Chicken is ready. For the garnish -  4 red onions sliced- fry in pan until golden and crispy  Add 6 chopped bullet chillies mix in for a few mins.  For the rice-  Zebra long grain rice - 3 large glasses  Pre soak for a few hours before soaking they cook quicker.  In a large pot - add 2-3 bay leaves  1 cinnamon stick  Pinch of jeera  And 1-2tsp salt  Once water comes to a boil -  Add the rice mix and leave for 10-12mins keep checking once they split into 2-3 pieces they are ready do not over cook them.  Layering -  Start with a bit of rice  Chicken masala  Rice  Chicken masala  And then rice again.  Garnish with onion/chilli + coriander  Orange food colouring - mix 2-3tsp with boiling water  Place back on low gas for 8-10mins to allow it all to properly set and come together.
