High tack adhesive needs to breath all the time, glue it in lines. For the same distance, use a strong mirror tape

Not very good. No insulation or vapor barrier. Install foam panels first and keep 2x4 studs turned sideways. Then keep drywall.

Ceilings first so you get perimeter fixing to the board to prevent cracking

so by adding the spray foam you've sealed the mud off from air.... mud needs air to dry, thats gonna grow mold, mud and striker nails for the win
