Shakshuka is such a simple dish and you probably have all the ingredients at home - I added in butterbeans to this dish for some extra fibre, volume and a creamy texture. This dish has 525 calories 31g protein, 47g carbs, 22g fats including a slice of bread. Ingredients (3 people): - 400g chopped tomatoes - 120g onion - 300g peppers - 12ml olive oil - 6 large eggs - 240g butter beans - 25g feta cheese per person - 45g sourdough per person or any bread you like - Smoked paprika, cayenne pepper, cumin, garlic, salt and pepper Start by adding oil to a pan and cooking down onions. Then add in peppers and season with smoked paprika, cayenne pepper, cumin, garlic, salt and pepper - and cook for a further few minutes. Add in a can of chopped tomatoes, along with some of the rinsed out water. I transferred this to a smaller pan so that the sauce level was high enough to cook the eggs. Then add in a tin of butter beans for extra volume and fibre - They also go lovely and creamy cooked in the sauce. Now make some rough divots in the sauce to crack your eggs into. Season them and then simmer on low with a lid on for about 6-8 minutes until they are cooked to your liking. Top this with feta cheese and chopped coriander. Finally Serve it up with some crusty bread and enjoy!
