Chicken & Rice 🇱🇧 Do they actually make this in Lebanon? Not a bloody clue. Does it taste like something they’d eat there? Absolutely… maybe🤓. Either way, it’s a healthy, ridiculously tasty meal, and that orange sauce… goodness gracious me. 🥵 Ingredients: 1kg chicken legs 2 cups basmati rice 1 cinnamon stick (for the rice) Marinade: 1 tbsp Lebanese 7 spice 1 chicken bouillon cube (crumbled) 2 tbsp tomato paste 3 cloves garlic, grated 1 tbsp onion powder Juice of 1 lemon 2 tbsp vinegar 2 tbsp Greek yogurt (I forgot to add it 😢) Olive oil Salt Orange Sauce: 2 large roasted peppers 1 onion 4 cloves garlic 1 tbsp tomato paste Lemon juice Salt MSG Mayonnaise (to taste) Salad: Red onion Tomato Parsley Lemon juice Salt Sumac Method: 1️⃣ Marinate the chicken with all the marinade ingredients and leave for at least 1 hour. Wash and soak your rice while it marinates. I forgot to add the Greek yogurt, and I’m sure it would’ve made it even better. 2️⃣ Add all the orange sauce ingredients and water to loosen it up (except the mayonnaise) to a blender and blitz until smooth. Taste and adjust the salt if needed, then add the mayonnaise and blend again. I haven’t listed an exact amount because it’s down to your big back preference. I have no idea how much I used lol🤓. 3️⃣ Heat a generous amount of oil in a pan—the rice will soak a lot of it up later. Fry the chicken until cooked through, then remove and set aside. ( I charred the skin with a blowtorch but if you don’t have once you can use a broiler on the oven) 4️⃣ Add the cinnamon stick to the same pan and fry for 1–2 minutes to release its flavour. Pour in water for the rice, using a 1:2 rice-to-water ratio. 5️⃣ Once the water is boiling, add the soaked rice. Cook on a high heat until the water level drops below the rice. Taste and adjust the salt if needed, then cover with a lid and cook on the lowest heat for 15 minutes. 6️⃣ Pile everything into one mega bowl, layering the fluffy rice with the chicken, fresh salad, and that magical orange sauce.#fyp #EasyRecipes #chicken #healthy
