@jackfruit.jill.eats: The Sudra is an all-vegan restaurant serving Indian food with New Mexico influences located in Portland, Oregon. Owner Sanjay Chandrasekaran, who’s Indian-American, told Eater in 2019, “When I first opened the restaurant, it almost felt dishonest to do traditional Indian food. I grew up cooking with my mom, but she learned to cook after she left India. So even the way she cooks is . . . Indian, but we grew up in New Mexico, so there was always green chiles in our food. Which is awesome.” The Sudra currently has three locations: N. Mississippi, NE 28th, and Beaverton. We visited the N. Mississippi location. Here’s what we ordered — TAMARIND BEETS Served cold with tamarind chutney and soy yogurt. KALE SAAG PANEER BOWL OTA Tofu paneer simmered in kale and sunflower seed curry. LENTIL TAMARIND SOUP Lentils, carrots, red onions and yukon gold potatoes. PEACOCK SALAD Kale in tahini dressing, soy curls, ginger-agave roasted carrots, bell peppers and corn.
