@naomiseifter: I’m so obsessed with this fermented hot honey! Making this pantry staple is SO EASY and the result is so delicious and it takes less than 5 minutes to make. Just fill a pint jar with a bunch of sliced hot (hot!) peppers (fresno and habanero are my favorite), add a sliced garlic clove or two and top it with raw local honey. Mix it up a little bit and the honey will fall into all the nooks and cranny’s of the peppers and add more honey until the jar is full to the top (minus 1/4-1/2 inch of headspace). I like to make sure the peppers are all covered by the honey (they will float to the top) for preservation reasons, but I haven’t found that I’ve needed a fermentation weight or anything for this recipe. I covered the top with a folded kitchen towel and a rubberband so it can still breathe. You certainly could use a lid, but since it will ferment slightly due to the nature of the peppers, I found a kitchen towel is the best because then I don’t have to release air every day or so. It just sort of stays on my counter this way. I stir it up every day or two and tend to it like I would my sourdough starter, but I drizzle it on everything. The great thing is, the honey takes on the heat from the peppers immediately, so you don’t need to wait until it ferments to use it. Just drizzle away! It thins out over time as the peppers break down, but will be so so delicious over anything you can imagine, really. After two weeks or so, you can replace the kitchen towel with a permanent lid because your fermentation activity should be complete. This will stay good because honey is the preservation agent, just make sure your peppers stay inside the honey, not on the sides of the jar. You can put this on everything, in everything, or in a tea!
