@spicymoustache: This is my own twist on a typical Italian recipe from south Italy called “arancini”. I always find myself with some left over white rice or risotto and this is a super tasty way to make use of it and not waste anything! ARANCINI 🍚🥫🧀 3 x cups leftover rice 1 x onion 1 x small carrot 100 x ml broth 2 x tbsp olive oil bread crumbs Salt pepper Vegetable oil MINCED SOY RAGÙ: (recipe from @mensch.chef) 4 x tbsp olive oil 4 x garlic cloves 50 x ml broth 1/2 x cup soy mince 3/4 x cup tomato sauce Optional : vegan cheese , peas STEP BY STEP: - In a pan stir fry the onion ,carrot (finely chopped) with olive oil , add the rice, vegetables broth salt and pepper. Adjust to taste. - The mix should be nice and sticky - Let the rice cool down while preparing the ragù. - In a pan heat some olive oil and slowly cook some garlic until golden, remove it before adding other ingredients. - In a bowl mix the minced soy with some broth and add it to the pan with tomato sauce and peas . - Roll the arancini as big as you like , we prefer them medium size so they are big enough to fit some vegan cheese and have a lovely melting cheese heart when ready. - Roll them in breadcrumbs and fry until golden . - Serve hot with some tomato sauce 🙌 #tiktokfood #asmr #italy
