@emthenutritionist: Gnocchi and leek bake You will need to serve 4 2 large leeks 1 large courgette 1 clove garlic Sprig fresh thyme 500g gnocchi 1 tsp mustard 350ml chicken stock (made using 1 chicken stock cube) 200g half fat crème fraiche 1 heaped tbsp flour Parmesan cheese 1. Preheat the oven to 200c fan. 2. Slice the leeks into rounds. Core the courgette and cut into small dice. Mince the garlic. 3. Sweat the leeks, courgette and garlic in 1 tbsp olive oil with a pinch of salt and fresh thyme for 10 minutes. 4. Sprinkle in the flour and mix for 2-3 minutes. Pour in 350ml chicken stock, season with black pepper and simmer for 10 minutes to thicken. Stir in the crème fraiche, mustard and gnocchi, simmer for a minute or so then tip into a baking dish. 5. Cover with lots of grated Parmesan and bake for 15 minutes until the top is golden and delicious.
