you could maybe do this again but mix the turkey with chopped green beans and cook in the zucchini boats? I've done a similar recipe like that.

You should try making a vege soup. Make a turkey broth and then add turkey, zucchini, beans and salt.

another idea: if you shred zucchini and cook it down for a few hours with a little bit of olive oil it turns into a creamy sauce

We usually cut the top part, remove the insides of the zucchini (hallow it) then fill it with ground meat and cook it (google it it’s called mahashi)
