Salmon and Spinach Filo Cottage Cheese Quiche  350kcal and 27g protein, serves 4! Quiche and a salad is a classic lunchtime staple, and I wanted to give them my signature twist and transform your standard recipe into one full of protein, healthy fats, and balanced nutrition. Ingredients: 20cm deep cake tin 300g cottage cheese (must be full fat)  100ml semi skimmed milk 5 medium eggs 100g spinach (wilted) 10g chives 100g smoked salmon Black pepper & salt Lemon zest 4 sheets filo pastry, cut in 1/2  Spray olive oil 50g feta cheese Preheat your oven to 160°C fan. In a blender or food processor, blend the cottage cheese with the milk until smooth. Transfer to a large mixing bowl. Add the eggs to the bowl and whisk until well combined. Stir in the wilted spinach, chopped chives, smoked salmon, black pepper, salt, and lemon zest. Mix until all ingredients are evenly distributed. Cut the filo sheets in half. Lightly spray a deep round baking tin with oil. Layer the filo sheets in the tin, spraying each sheet lightly with oil as you go. Ensure the sheets are layered evenly to form a sturdy crust, overlapping them to cover any gaps. Pour the cottage cheese and egg mixture into the prepared filo crust. Tuck the edges of the filo back in on itself to create a neat edge, you can be rough with this dont worry about it being perfect. Sprinkle the crumbled feta cheese evenly over the top of the filling. Place the quiche in the preheated oven and bake for 60 minutes, or until the filling is just set. It will continue to set as it cools. Allow the quiche to cool slightly before serving to ensure it is fully set. This also makes it easier to slice. Enjoy cold or reheat!
