@constellationinspiration: day 7: deep fried milk (炸鲜奶) ✨ deep fried milk is a popular cantonese dessert and it’s mostly served in restaurants. the milk filling is soft, creamy, and sweet, while the exterior is golden and crunchy. i’m making them for lunar new year because they look like gold bars, to make sure the new year is full of prosperity 350g (3 1/2 cup) milk 45g (5 tbsp) cornstarch 40g (3 tbsp) granulated sugar 60g (½ cup) cornstarch 1 egg, beaten 120g (1 cup) panko breadcrumbs grease a rectangular container (mine was 7 x 4) with a bit of vegetable oil. line container with a piece of parchment. set aside in a pot, combine milk, cornstarch, and sugar. whisk until mixture is smooth. cook mixture of medium heat until it is yogurt-like in consistency, about 5 mins pour the thicken milk mixture into the container. put on the lid and transfer container to the fridge. chill mixture until it is cold and the milk pudding has set, about 3 - 4 hours once pudding has chilled, remove the pudding from the container to a cutting board. cut the pudding into rectangular pieces, about 1 - 1.5 inches in length dip each piece of milk pudding in cornstarch, egg, then panko heat vegetable oil to 320f. fry milk pudding in the oil until golden, about 3 mins. transfer fried milk pudding to a plate lined with a paper towel. repeat with all pudding pieces dust with icing sugar and serve #c#chinesenewyearl#lunarnewyearf#friedmilkbakingtiktok
