The BEST sticky date pudding 😮‍💨🤌🏻 gluten free, dairy free, refined sugar free, vegan and soooo so yummy🫶🏼 recipe below  Ingredients  Pudding - 2 cups pitted dates - 1 cup boiling water - 1 tsp bicarbonate soda - 1 cup gluten free self-raising flour - ¾ cup coconut sugar - ½ cup coconut oil (melted) - 1 tsp vanilla Caramel Sauce - ¾ cup coconut sugar - 1  x 400ml can coconut milk - 3 tbsp coconut oil - 1 tsp vanilla - pinch of Himalayan salt  Method 👩🏼‍🍳  Preheat oven to 180°C and spray a 20cm square baking tray with olive oil.  Add the dates, boiling water & bicarb soda in a bowl and set aside for 15 minutes so that the dates soften.  While you wait for the dates, add the melted coconut oil, vanilla & coconut sugar into a bowl and whisk until combined.  Once the dates are ready, strain them and save the water.  Blend the dates in a food processor/nutribullet so they are finely chopped then add them to your coconut oil/sugar mixture.  
Sift in the flour and add the date water you saved. Using an electric hand held mixer, mix until well combined. Add in your chopped dates and mix again until it’s nice and smooth.  Pour the mixture into the sprayed baking tray & bake in the preheated oven for 35 minutes.  While the pudding is baking, get started on your caramel sauce. In a saucepan, add the coconut oil, can of coconut milk, coconut sugar & vanilla and heat over high heat, stirring with a whisk. Once it starts to boil, turn down the heat to medium-low and keep stirring for another 15-20 mins. You want it to be bubbling a litttleee.  Add a pinch of salt.  Once the mixture thickens then it’s ready to take off the heat. It will still look a bit runny but it’ll thicken up as it cools slightly! (Trust the process). Slice up your pudding and serve with pana organic (or your choice of) vanilla ice cream and drizzle the caramel sauce on top.  This is the perfect dessert for dinner parties, Christmas, birthdays etc. it is a crowd fave 🤌🏻 Enjoy 😮‍💨🤭 x
