🍆 BURNT AUBERGINE, BURRATA + CHARRED CHERRY TOMATOES 🍅  if you’ve not tried burning your aubergines whole yet, this is your sign - it creates the smokiest flavour + a serious melt in your mouth texture 🤤 ad | I grilled my aubergine whole on the @Ninja UK WoodFire Pro, which keeps outdoor cooking super simple + ensures perfect results every time. you can BBQ, grill + smoke - ideal for cooking veg during the summer. there’s even an app you can use to track it all too ⏱️ I served my aubergine with plant-based burrata, blistered cherry tomatoes, garlicky breadcrumbs + fresh basil. an absolutely delicious plate of summertime food. the full recipe can be found below. enjoy + let me know if you give it a go 👇 INGREDIENTS (serves 2) 2 aubergines 250g cherry tomatoes 2 tbsp balsamic vinegar 200g burrata (I use @juliennebruno burrella) Handful fresh basil 100g stale bread (or use shop-bought breadcrumbs) 1 garlic clove, minced Handful fresh parsley, finely chopped Extra virgin olive oil, salt + pepper METHOD 1. Get your grill / griddle pan / bbq up to high temperature. If using the Ninja WoodFire, add woodchips + set the woodfire flavour.  2. Rub each aubergine with 1 tbsp olive oil + grill for 20-25 mins, rotating every 5 mins (you want the skin blackened + flesh fully cooked through).  3. Get the tomatoes on a small roasting tray / saucepan. Season with salt, pepper, 2 tbsp olive oil + balsamic vinegar. Mix well, then roast / grill for 10-15 mins,  until charred in places.  4. For the breadcrumbs, you can use pre-made or simply blitz your bread in a food processor to break down. Get a good glug of olive oil in a frying pan on a medium-high heat + add the breadcrumbs. Cook for 5-10 mins, stirring regularly, until golden + crisp. Season to taste with salt, pepper, minced garlic + parsley.  5. Once the aub is cooked, leave to cool. Carefully peel off the burnt skins - you want to keep the flesh intact. Gently slice open with knife + mix through leftover tomato juices.  6. To serve, spread your burrata on a plate.
