Is eating carrots safe? Because people on here often say that carrots contain vitamin A and that it can be overdosed. But based on what I understand the body naturally regulates vitamin A levels: β-carotene from vegetables such as carrots is converted into retinol only when the body needs it, thanks to the activity of β-carotene 15,15’-monooxygenase 1 (BCO1), which decreases when vitamin A levels from animal products are already sufficient, protecting against toxicity. As a result, consuming carrots and other β-carotene-rich foods is safe even when retinol is obtained from animal sources, whereas excessive vitamin A from animal products or supplements can lead to overdose.
