Skillet Philly’s  Serves 4-6 (Depending on the bread you use) Prep 1hr (freeze yo meat) Total: 30 minutes cook time (or longer if you want to caramelize your onions)   6 tbsp unsalted butter, divided into 2 tbsp pats  1 loaf crusty french bread, cut horizontally or hoagie rolls 1.5 pound sliced steak (see tip)  Salt, pepper, or steak seasoning  One white onion, thinly sliced  1 tbsp Brown sugar 6-8 Bella Mushrooms, thinly sliced 4-6 cloves garlic, minced  2 peppers, thinly sliced or roughly chopped, steam seeds removed  2oz Jarred Pepperoncini or Jalapenos, slices (optional) 5-6 slices of Provolone or try pepper jack cheese (the jarred queso (8oz of a (15oz jar) or cheese whiz! (Easy cheese)  Optional sandwich dressing, Mayo or horseradish, and I dont mind some mustard, add the LOT (lettuce, onion, tomato) if ya got em’! And serve with a pickle!  I used Ribeye but you can also use flank or skirt steak for this, freeze your steak for about an hour because it is easier to cut into thin slices! Literally don't skip this tip especially if use a good quality meat! Season with salt, pepper or fav steak seasoning after slicing ( I do about 1 tsp of salt per pound) You can also ask the butcher to thinly slice this for you! In a large pan over medium heat begin by toasting the buns in the butter, add 2 tbsps of the butter and toast rolls until golden brown, 3-5 minutes! Add 2 tbsp of butter, followed the onions, brown sugar and mix until they start to caramelize (15minutes) , if you don't have time for that just cook until softened, add the garlic, mushrooms, and peppers, let those soften some more, about 5-10 minutes.add jalapenos or pepperoncini, remove from the pan into a clean bowl and set aside.  To your hot pan add the butter, and then sliced meat, cook on both sides for about 2-3 minutes until no longer pink, and developed a small crust on the outer layer of meat. Totally add your favorite herbs if you want too. I like rosemary when using butter and steak. Add the veggies from the bowl, to reheat. Next, if you use a fresh cheese, fan out the layer on top and cover, the heat will melt the cheese.
